Chicken Cutlet / Simple chicken patties

This is a lip smacking dish. It could be had as a tea time snack with a dip or it could be used as a Pattie for burgers or you can even make a yummy wrap by adding fruits like pomegranate, apple or pineapple or you can also make a good sandwich with it. No matter how you eat it, it tastes good and gives you a want to eat more. This is one of my fiance's all time favorites, but he likes the beef version more. You can substitute chicken with beef, mutton or pork or even a mixture of veggies. So versatile, easy and a must try food at every home.


Things you'll Need :
  • Chicken - 1/2 kg (Boneless)
  • Egg - 1 large
  • Bread crumbs
  • Boiled and mashed Potatoes- 4 medium sized
  • Onion - 1 medium sized
  • Green chilly - 2 small
  • Ginger - 1 tsp
  • Garlic - 1 tsp
  • Coriander and mint leaves - 1 tbsp
  • Oil - 1 tbsp + 7 tbsp for frying
  • Salt to taste
  • Chilly powder / garam masala to taste

Method:
1. Prep all the ingredients. Chop onions, chillies, ginger, garlic and the herbs very FINELY. DO NOT MAKE A PASTE. Beat the egg well and keep aside.


2. Mince Chicken - Boil Chicken with water, salt and turmeric powder. Once its cooked through take it in a blender and mince it. Make sure you squeeze out the water from chicken before adding it to the blender. (If you are using mutton/ beef/ pork you'll have to pressure cook it for 3-4 whistles).

3. Heat Oil in a pan, Saute onions, ginger, garlic and green chillies, once they become soft add in the minced Chicken and herbs, add salt and spices to taste and toss for 2 minutes. Once its done, transfer to a mixing bowl and let it cool


At this stage you can add some tropical fruits and make a roll or wrap.

4. Once its warm enough to handle, add in the mashed potatoes and press it together until it forms one large lump of dough. If you feel its not coming together add in some roasted gram flour (pottukadalai maavu). Make 1 inch patties by taking a small portion of the chicken mass.


5.  Once all the patties are done, dip each one in beaten egg, coat it with bread crumbs and shallow fry in a sauce pan. Keep a medium flame so that you don't burn the cutlets. Add enough oil so that half of the Pattie is immersed in oil, that's when you'll get that crispy and evenly colored outer layer.



Once the patties/ cutlets are browned, remove from flame and place it in any medium that can absorb oil for 5 minutes and then serve hot.
