Wheat N Fig Pancake



This is a Simple, awesome, soft, sweet and fluffy whole wheat flour pancake topped with fig, raisins and black pepper, black pepper gives a super kick to the whole dish. Do give it a try, its really easy and tasty. Fig replaced by bananas will taste equally good.

Warning: This is a very addictive pancake

Things Needed:
Whole wheat flour - 1 cup
Egg - 1 (white and yolk separated)
Sugar - 5 to 6 tbsp ( Yes!! 5 to 6 tbsp, sugar gives a beautiful caramelization on the pancakes + i love sweet pancakes not the blunt one's. Feel free to adjust it to your taste)
Milk - 1 cup
Ripe Figs - 3 to 4 nos (peeled and sliced thinly)
Raisins - 1/4 cup (optional)
Black Pepper powder - 2 tbsp
Butter - 2 tbsp

Method:
1. In a bowl take the whole wheat flour, egg yolk, sugar and milk

2. Beat on low speed for a minute, scrape down the sides and whisk for another minute.


3. In a separate clean bowl, whisk the egg white until you get stiff white peaks. Add the well foamed egg white to the pancake batter and fold it in gently. DO NOT OVERMIX. This is what makes the pancake very fluffy and soft. ( you can skip this step by adding whole egg + baking soda to the batter, but i am not sure if the result will be as good as this)


4. Heat a pan on medium flame, add some butter and pour in a ladle full of pan cake batter.




5. Place some of the sliced figs on top and drop in 3 to 4 raisins. Sprinkle a pinch of black pepper powder on top.



6. When you see bubbles forming on top and the edges getting a little brown flip the pancake to other side. Let it cook on the other side for a minute, when its done remove from flame.


7. You don't need any toppings for these pancakes. I served it hot to my family and it all vanished in a second.

Alternatives for fig and raisins:
Banana + walnuts or cashews. Don't forget the black pepper for this
Apples + raisins + cinnamon instead of black pepper.
Strawberries + Nuts
