Easy Carrot Cake

A delicious dense Cake for all occasions

 

Things Needed:

 For Cake:
  • Grated Carrot - 2 cups
  • Hot Milk - 1/3 cup
  • Powdered Sugar - 1+1/4 cup
  • Vegetable Oil - 1/2 cup
  • Vanilla Essence - 1 tbsp
  • Eggs - 3
  • Flour - 2 cups
  • Baking soda - 1 tsp
  • Baking powder - 1 tsp
  • Cinnamon Powder - 1 tsp
  • Clove Powder - 1 tsp
  • Salt - 1/2 tsp
For Icing
  • Fresh Cream - 1 cup
  • Icing Sugar - 1/4 cup
  • Orange Zest - 1 tbsp

Method:
1. Instead of vegetable oil, i used 1/4 cup of oil and 1/4 cup of melted butter for a soft texture.


 2. Keep all your ingredients ready before baking.

3. Take a mixing bowl, add in the grated carrot, hot milk, sugar, vanilla essence and lightly beaten eggs. Mix well.

 

4. In another bowl mix all the dry ingredients ( flour, baking powder, baking soda, cinnamon powder, clove powder and salt )
5. Add the dry mix to the wet mix and prepare the cake batter.
6. Pour the batter in a greased baking tray and bake for 20- 25 mins at180 degree C.

7. For icing, Beat fresh cream, icing sugar and orange zest and top it on the cake.  

8.  Enjoy with a cup of tea (^_^)
