Nandu Rasam / Crab Soup

A Hot Soup that goes well with rice. It really helps when you want to get rid of common cold. Best served with rice or you can filter it and drink it as such.  Things Needed: Whole Garam masala's -  2 each (cinnamon, clove, cardamon, black pepper, curry leaves, dried red chillies, cumin seeds and fennel ) Small Onion - 5 to 6 (sliced) Tomato - 1 (chopped) Green chillies - 2 large (sliced, scale up to taste) Oil- 2 tbsp Crab - 2 large (wash well, clean, apply turmeric and keep aside) Fennel - 1 tbsp Whole black pepper - 1 tbsp Cumin Seed - 1 tsbp Garlic cloves - 7 to 8  Ginger - a small slice Curry leaves - 2 sprigs Poppy seed - 1tbsp Cashews - 2 or 3 Thin Coconut milk - 1 cup Ghee - 1 tsp Coriander stem - 1tbsp (chopped) Method : 1. Easy Carrot Cake

A delicious dense Cake for all occasions   Things Needed:   For Cake: Grated Carrot - 2 cups Hot Milk - 1/3 cup Powdered Sugar - 1+1/4 cup Vegetable Oil - 1/2 cup Vanilla Essence - 1 tbsp Eggs - 3 Flour - 2 cups Baking soda - 1 tsp Baking powder - 1 tsp Cinnamon Powder - 1 tsp Clove Powder - 1 tsp Salt - 1/2 tsp For Icing Fresh Cream - 1 cup Icing Sugar - 1/4 cup Orange Zest - 1 tbsp Method: 1. Instead of vegetable oil, i used 1/4 cup of oil and 1/4 cup of melted butter for a soft texture.   2. Keep all your ingredients ready before baking. 3. Take a mixing bowl, add in the grated carrot, hot milk, sugar, vanilla essence and lightly beaten eggs. Mix well.   4. Roasted Prawns || Eral Varuval

Things You Will Need: Prawns - 300 grams (a small bowl full) Chilli Powder - 2 tbsp Tamarind - 1 very small ball Water as required Coconut Oil - 2 tbsp Cumin - 1/2 tsp Crushed Ginger and Garlic - 1 tbsp Onion - 1 small Tomato - 1 small Turmeric Powder - 1/4 tsp Rock Salt as required Coriander powder- 1/2 tbsp Garam Masala - 1/4 tsp Method: 1. Take the cleaned prawns, tamarind, salt chilli powder in a heavy bottom pan or a earthenware. 2. Add enough water to cook the prawns. Don't add too much water or the prawns will turn rubbery when cooked. 3. Once the prawns are cooked they'll start to curl beautifully. Allow the water to dry out.   4. Take another pan or kadai. Add coconut oil and cumin.   5. Add the crushed Ginger and garlic. 6. Add the onions and cook till the onions turn golden brown. For making perfect caramel all you need is patience. So keep calm and start with Joy :D Ingredients:   Sugar- 1 cup for 1/2 cup caramel   Water as required Video of step by step pictures:   Method:   1. Take sugar in a heavy bottom wok. Switch on the stove and maintain a medium flame throughout the cooking process if you are doing this for the first time. Start on high when you are confident enough. 2.Use a metal spoon and stir the sugar once in a while. 3.The sugar will slowly start to melt and form crystals as you stir, don give up just stir slowly. 4.More crystals will start to form, At this point stir the sugar only occasionally. 5.Push crystals to the center where the melting process happens faster. One of my all time favorite food is Biriyani. I crave to have biriyani almost all the time There are many versions of Briyani and this one is Tamilnadu style one pot recipe.  Ingredients: 1. Basmathi Rice-1 kg 2. Chicken- 1 + 1/2 kg 3. Chilly Powder - 2 tsp 4. Curd - 1/2 cup 5. Salt to taste 6. Turmeric Powder - 1/4 tsp 7. Oil as required. 8. Whole Spices 9. Onion- 4 chopped 10.Tomato - 3 diced. 11. Green chilly- 5 to 6 12. Garlic cloves - 5 to 6 13. Biriyani Masala - 2 tsp ( any brand) 14. Fresh Herbs- a handful ( I used coriander and mint leaves) 15. Lemon juice - 1 tsp 16. Ghee- 2 tsp 17. Shallots - 4 to 5 18. Ginger - 1 large piece Method: 1. Pressure cook Naatu Kozhi with salt, turmeric powder and chilly powder for 1 whistle and set aside. 2. This is a dish i made at home today and it turned out really well :) its damn simple if u love to cook u can try it at home :) Ingredients Jaggery-1 cup Bengal gram-1 cup Grated coconut-1 cup Maida flour(All purpose Flour) -2 cups Turmeric powder-1 tbsp Oil/Ghee- as required Preparation Mix 1 cup- Maida with 2 table spoon of oil n a pinch of turmeric powder. Mix well till it forms a very soft dough. Pressure cook Bengal gram well (sambar paruppu) After the Bengal gram gets soft drain excess water if any , and mash it coarsely or grind it in a blender. Heat 2 tsp ghee roast a hand full of grated coconut in it, add Jaggary to your sweetness when it melts add mashed Bengal gram Make a dry mixture out of these 3, the mixture must be like puttu maavu.
