Banana Bread - No Refined Sugar

  Ingredients 1 cup flour  1 tsp ground ginger 1 tsp ground cinnamon A pinch of nutmeg powder 1 and 1/2 tsp baking powder 3/4 cup almond meal 1/4 cup desiccated coconut 4 large ripe bananas 3 eggs (room temperature) 2 tbsp honey 2 tbsp coconut oil (melted) 1 tsp vanilla extract Method Preheat oven to 180-degree Celsius. Lightly spray a 10 x 20 cm loaf tin with oil. Line the base and sides with baking paper Prepare dry ingredients  Sift the flour, ginger, cinnamon, nutmeg and baking powder into a large bowl. Stir in the almond meal and coconut. Prepare wet ingredients  Mash 3 of the bananas in a medium bowl. To the mashed bananas, add the eggs, honey, melted coconut oil and vanilla. whisk well until well combined. Combine dry and wet ingredients Pour the banana mixture into the dry flour mixture and mix until just combined. (dont overmix). Pour the batter into the prepared loaf tin. Anzac Biscuit

RECIPE Ingredients 1 cup of plain flour 1 cup rolled oats 1 cup brown sugar 1/2 cup of desiccated coconut 125 grams unsalted butter   2 tbsp of maple syrup  (or golden syrup) 1/2 tbsp baking soda 1 tbsp water Method Preheat oven at 175 degrees Celsius, Line a baking tray with baking paper. Sift the flour into a bowl and then add sugar, rolled oats and coconut. In a saucepan, melt butter with baking soda, water and maple syrup. Add the liquid mixture to the dry ingredients and mis thoroughly. Press the mixture into biscuits and place on the tray. (We used ice cream scoop to scoop the flattened the ball with our palm for even size biscuits) Bake for 10-15 minutes until golden brown. Cool the biscuits until they harden. Kale Paruppu Kootu

A very tasty and healthy side. This Kale and lentil curry is perfect for serving with rice. Kale can be substituted with any spinach of your choice.  Servers 4. You’ll Need: Kale leaves with stem - 1 cup (chopped) Moong Dal - 1/2 cup (Yellow split) Onion - 1/2 (chopped) Mustard - 1/2 tsp Urad Dal - 1/2 tsp Green chilly - 1 Dry Red chilly - 1 Hing - a pinch Shredded coconut - 2 tbsp Water - 3/4 cup Salt to taste Method : 1. Pressure cook the dal, green chilly and kale with 1/2 cup water on high heat for 3 whistle. 2. Heat oil in a pan on medium heat and add mustard seeds when the oil is hot enough. 3. Once the mustard seeds splutter, add urad dhal, dry red chilly and hing. Sautee for 1 minute 4. Add the onions and let it soften  5. Add in the cooked dal and kale. 6. Add salt to taste. 7. Add around 1/4 cup of water and cook on high heat until all the water evaporates. 8. Finally add in the shredded coconut and finish. Serve hot with rice and enjoy (^_^)

A delicious and moist chocolate cup cake recipe with cream cheese frosting. Makes 12 cup cakes                                         Things Needed: For the cake: Plain Flour - 3/4 cup Raw Sugar - 3/4 cup Cocoa Powder -1/3 cup (Sifted and dutch processed) Baking Soda - 1/2 teaspoon Baking Powder - 1/4 teaspoon Salt - a Pinch Egg - 1 Milk - 1/3 Cup Hot boiling water - 1/4 cup Vanilla essence - 1 teaspoon Oil - 1/4 cup (any flavourless oil - I used sunflower oil) For the Cream Cheese Frosting: Cream Cheese - 250 grams (1 block) Butter - 50 grams (softened) White Sugar - 1/2 cup Lemon Juice - 1 teaspoon Vanilla Essence - 1 teaspoon Method : For the Cake: 1. Savoury Veggie Muffin

This is a delicious breakfast muffin which is kid friendly and also stores well Things Needed: Carrot - 1 medium size Zucchini - 1 medium size Sweet Corn - 1 medium size Grated mozzarella - 1 cup Flour - 2 cups Olive oil - 1/4 cup Yoghurt - 1/4 cup Baking powder - 2 tsp Egg - 2 Salt to taste Herbs of your choice ( I used some oregano and parsley) Method: 1. Grate carrot and zucchini. Remove the corn Kernels from the cob using a sharp knife and set aside. 2. Combine all the ingredients in a large bowl and gently mix until all the ingredients are well combined. 3. Grease a 12 cup muffin tray with olive oil and bake at 180 degree Celsius for 20-25 minutes or until the muffins are cooked through (tooth pick inserted should come out clean) 4. Serve warm or cool it in a wire rack and store for later use. Mushroom N Egg Roll

A very easy and quick recipe which could be a great breakfast or lunch. It requires a very few ingredients and the simple spice mixes make the roll very tasty. Do read and try to enjoy this simple roll. Ingredients : All the ingredient measures are for 3 people.  Mushroom - As required ( I used about a 1 cup of chopped oyster mushroom to make for 3 people)  Eggs- 3  Onion - 1 large (Chopped) Oil as required Salt and pepper Wheat flour [or] All purpose flour(Maida) Method : 1. Let us start by preparing all our ingredients, I started by making the dough for roll, its a basic chapatti dough , i used Wheat flour, salt and water to make the dough. Paneer Bread Pizza

A quick variant to satisfy your pizza carving. This is a very simple recipe and budget friendly. It costed me around 125 Rs. to make this small batch. Serves 3. Ingredients: Bread (Whole Wheat or White Bread) - 6  Tomatoes - 2 large (chopped) Salt and pepper to taste Pasta Seasoning - few sprinkles Onion - 1/2 chopped Paneer (Cottage Cheese) - As required (Cut into small cubes) Mozzarella Cheese - As Required (Grated or sliced)   Method: 1. Butter the bottom of a large baking tray and line the bread slices as in the picture. 2. Prepare a quick tomato base and spread it on the bread slices This is how i made my tomato base: Pureed the tomatoes and sauteed it in a pan with 2 tablespoon oil, added salt, pepper and a pinch of pasta seasoning.
